Biscuit Bread Pudding


We had a crowd at the cabin this weekend so my mom was kind enough to feed the masses in the morning with a delicious combination of Biscuits and Gravy.  But she made ALOT of biscuits and since I hate wasting food I decided to use the leftovers to make Bread Pudding


INGREDIENTS

8 cooked biscuits

4 cups of milk

1 1/2 cups of sugar 

8 eggs 

1 tablespoon of butter

2 teaspoons of vanilla

1/3 cup of pecans

Whipped Cream




INSTRUCTIONS

Heat oven to 350 degrees

Rip the biscuits into large pieces and put them in a 3 quart casserole dish.  

 Pour half of your milk (2 cups) over the biscuits and let them soak until soft.

In a medium bowl crack and scramble your eggs. 

Melt the butter in the microwave and add to the eggs.

Add sugar, vanilla and remaining milk to eggs and mix well.

Sprinkle the nuts on top of your biscuits and them pour your egg mixture evenly over the top

Bake in an oven heated to 350 degrees for 45 minutes to an hour or until the pudding looks firm and a knife inserted to the center comes out clean.

Top with whipped cream and enjoy.
